Southern Living

Thank you, all, for your love, support and encouraging words on Friday. I have an appointment on the 24th to meet with a new doctor. I am very anxious. Your thoughts, prayers and words mean so much to me.

I hope you all had a great weekend. Our weekend got started off by Fred running in a 5K. He's really been training hard for this and Knox and I came out to surprise him at the finish line.

I don't know about where you live, but it was so freaking HOT this weekend. Don't get me wrong, I love warm weather, but it's unseasonably warm for mid-June. This is August weather. It's almost too hot to wear clothes. :)


I also have to take a minute to brag because we've cooked and eaten dinner at home 7 out of the 9 past days. If you know me, you know this is a record. And tonight is fajita night! We're just trying to be a little bit more health conscious and spend more time at home rather than in restaurants.

Here are some of the delicious recipes we've tried:
Oven Baked Sweet Potato Fries
Quesadilla Chicken with Taco Seasoned Red Potatoes
Fruit Salsa with Cinnamon and Sugar Tortilla Chips
Rosemary Ranch Chicken Marinade
Homemade Lasagna
Spicy Tilapia with Pineapple-Pepper Relish

You're right - it is entirely too hot to be mid-June. I told Mr. Potts earlier this year that we'd have a too short Spring & a brutal Summer.

I'm wishing I were wrong about that!

I made the tilapia recipe from CL & loved it!!

All of those sound amazing! I might just have to try one of those recipes myself. I feel like we eat the same thing over and over again, it's starting to get old. Congrats to Fred for completing his first 5k.

Thanks so much for those awesome recipes! And YAY for you making dinner 7 out of 9 nights!! I totally hear you on the H-O-T thing....it is 98 degrees and counting here...and humidity of 200 degrees....phew!

I have a recipe you HAVE to try! I wouldn't say it's healthy...but is anything in the South healthy?! Yeah to having an appointment with a new doctor!! & congrats to Fred on finishing the 5k!!! Oh and that's awesome about cooking all those yummy sounding things! We pretty much eat chicken, taco and steak every night haha

Congrats to your hubby on the 5k! Are you still living in FL? I live in Orlando. It seriously is way too hot already. I walked out the door this morning and couldn't breathe bc of the humidity! Ick! <333
