Favorite Thanksgiving Memory

My favorite Thanksgiving memory would be from Thanksgiving 2006. It was the night of our first date.

I know it's an odd night to have a first date, but both of our families live in town and both of our families always did Thanksgiving lunch so by the time 7pm rolled around, we would both be at home.

Fred and I had been friends since July and we knew we liked each other, but we had never been on a date together.  Well, the night before Thanksgiving, he asked me to go to a movie with him, but I didn't get the message until 9pm that night; so, we talked and decided to go Thanksgiving night.

I don't remember much about the day other than wishing it would hurry up.  Well, date time rolled around and we decided to go see a movie, "Stranger Than Fiction".  After the movie, we talked until about midnight and then the rest is history....

It's Ok...

Be a little freaked out that Thanksgiving is less than 2 months away and Christmas is less than 3 months away. Where does time go?

Be annoyed with the vet's office since they sent out an email yesterday stating you can only submit 3 pictures for the calendar.  (this may be because I submitted 10 last year...oops!)

Be excited about putting on a mini-fall carnival for the kids at the Ronald McDonald House of Memphis this weekend.

Favorite Football Pastimes

College basketball is more our thing, but we do keep up with football.  Fred likes the University of Tennessee and I like the University of South Florida (we're ranked #16).  We don't really have traditions for game days since we don't live anywhere near where we went to school.  We just try and watch the games on tv when we can.

I would like to go to a game at Tennessee because Fred says I've never experienced anything like it.  And I would love to take him to a South Florida game, especially since we're doing great this year!

On game days, I always wear one of my USF shirts.  South Florida plays Pittsburgh tonight; so, I had Fred take a picture of me this morning.  Go Bulls!
 
When it comes to professional football, I like the Tampa Bay Buccaneers, Tennessee Titans and Indianapolis Colts. I don't really keep up with them, but I will watch them if they're on tv.

Fall in Love: Fall Trips/Road Trips


Fall Trips/Road Trips

Fred and I will be heading to Louisville, Kentucky in mid-October for a trade show for work.  It's about a 5 hour drive from Memphis; so, it's not too bad.

Fred and I will also we traveling to Nashville, Tennessee in November for a charity event.

And we're hoping to make it to Knoxville, Tennessee for a game sometime this fall.


And who knows where else the fall will take us???

Fabulous Fall: Fall Recipes


Fall Recipes

I love to eat well most any time of the year, but especially in the fall and winter.  I love casseroles and soups.  Here are some of my favorite fall recipes:

Ingredients:
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)

Directions:
1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.

2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

**It was absolutely amazing. I used the "Hot" rotel and "Hot" taco seasoning to make it spicier. Very easy and very good!

Ingredients:
18 tablespoons unsalted butter, room temperature
3/4 cup light-brown sugar, firmly packed
1/2 teaspoon salt
3 cups all-purpose flour
8 tablespoons (1 stick) unsalted butter
1/2 cup light-brown sugar, firmly packed
6 tablespoons honey
2 tablespoons granulated sugar
2 tablespoons heavy cream
1/4 teaspoon salt
2 cups (8 ounces) pecan halves
1/2 teaspoon pure vanilla extract

Directions:
1. Place rack in center of oven. Heat oven to 375 degrees. To make the crust: In the bowl of an electric mixer fitted with the paddle attachment, mix butter and brown sugar on medium speed until light and fluffy, about 2 minutes. Add salt, and mix to combine. Add flour 1 cup at a time, on medium speed, mixing until fully incorporated after each addition. Continue mixing until the dough begins to come together in large clumps.
2. Press dough about 1/4-inch thick into a 9-by-13-by-1-inch baking pan. Prick the pastry with the tines of a fork. Chill until firm, about 20 minutes. Bake until golden brown, 18 to 20 minutes. Transfer pan to a wire rack to cool completely.
Reduce oven to 325 degrees. To make the filling: Place butter, brown sugar, honey, granulated sugar, heavy cream, and salt in a medium saucepan over high heat. Bring to a boil, stirring constantly until mixture coats the back of a spoon, about 1 minute. Remove pan from heat; stir in nuts and vanilla.
3. Pour filling onto the cooled crust. Bake until filling bubbles, 15 to 20 minutes. Carefully transfer pan to a wire rack to cool completely. Run a paring knife around edges of the pan, and invert onto cooling rack, leaving the pastry on the rack. Invert rack with pastry onto a cutting board, leaving the pastry on the board, filling side up.
4. Use a sharp knife to cut into 1-by-3-inch bars. Store in an airtight container up to 1 week.

*I forgot to take a picture of mine, but these were delicious. I think the honey adds a lot of flavors to the treat. Enjoy!

Very Busy People

Wow!  What a fun, but busy weekend?

On Saturday night, we had a yummy Memphis BBQ dinner with Fred's family at the famous Rendezvous!

On Sunday, Laura and I hosted a baby shower for our friends, Leslie and Sam.  It was a desserts only shower and it was a hit!

Fall TV Shows (New/Returning)

If you've read my blog for a while, you know we love television. Our DVR has more shows recorded on it than any DVR should. Knowing this doesn't keep us from watching any less or picking up any new shows. And I love this time of year because I am so excited for some of our favorite shows to return:
